Ice harvesting once thrived in Athens. Workers cut ice cakes, stored them in huge waterfront icehouses and shipped them to New York City each summer. Mechanical refrigeration ended that trade, and the icehouses stood empty. Then growers found the windowless, well-insulated buildings ideal for mushrooms.
